1/2 Cup Brown Rice
1 Italian tomato Tomatoes
1/4 Cup chopped Carrots
2 Tbsp chopped Scallions
1/4 Cup Chickpeas
1 Serving Field Greens Salad Mix
Prepare rice as per package directions.
Fold in chopped tomatoes, shredded carrots, and chopped scallion.
Drain chickpeas and fold into rice mixture.
Place a bed of greens on a plate and top with rice.
