1/2 Head medium (5-6" dia.) Cauliflower
2 Medium whole (2-3/5" dia) Tomatoes
1 1/4 Cup Parsley
2 Tablespoon Mint
8 Medium (4-1/8" long) Scallions
1 Cucumber (8-1/4") Cucumber
1 Dash Pepper
1/2 Tsp Salt
3 Tbsp Lemon Juice
1/3 Cup Olive Oil
Separate cauliflower into florets.
Dice tomatoes.
Chop parsley, mint, and green onions.
Finely dice cucumber.
Place the raw cauliflower florets into your food processor and pulse a few times until the consistency of couscous is achieved.
Transfer mixture to a large mixing bowl and combine well with the other ingredients.
Adjust seasoning as necessary.
