2 Cup Water
1 Cup Quinoa
1 Tsp Salt
1/4 Cup Lemon Juice
1/4 Cup Olive Oil
1 Cup, chopped Scallions
1 Cup Spearmint
1 Medium Cucumber
2 Cup, chopped Tomatoes
2 Cup, crumbled Feta Cheese
Pour 2 cups water into medium saucepan.
Bring to boil.
Add quinoa and 1 tsp of salt, lower the heat and simmer for 15 minutes, covered.
Drain and place in a bowl.
Add lemon juice, olive oil, and salt to taste.
In a large bowl, combine scallions, mint, cucumber, tomatoes, salt, and pepper.
Add quinoa and mix well.
Add feta right before serving.
