3/4 Cup Quinoa
1/2 Medium (approx 2-3/4" long, 2-1/2 dia.) Red Bell Pepper
4 Tsp, whole Flaxseed
1 Dash Salt
1 Dash Pepper
1 Large Egg White
3 Cup Spinach
Prepare quinoa as per package directions.
Set aside.
Combine cooked quinoa, bell pepper, flaxseed, salt, pepper, and egg in a med.
bowl; mix well.
Form mixture into 2 patties.
Cook in a non-stick pan over medium-high heat until cooked through and evenly browned on both sides.
Serve over spinach and enjoy!
