1/3 Cup (8 fl oz) Unsweetened Coconut Milk
1/4 Cup Pumpkin
2 Extra large Egg
1 Tsp Vanilla Extract
1 1/3 Cup Almond Flour
2 Tbsp, ground Flaxseed
1 1/2 Tsp Pumpkin Pie Spice
2 Tsp Baking Powder
1/4 Oz Stevia Sweetene
Mix all wet ingredients together, then sift the dry ingredients into the wet ingredients
Mix everything together until a slightly liquidy batter is formed
Heat waffle iron, then spray with coconut oil, and pour batter onto waffle iron
Cook until waffle iron indicates it is finished, then cook longer (if you prefer it crispier) or remove waffles
Serve and enjoy!
