1 Sweetpotato, 5" long Sweet Potato
2 Potato medium (2-1/4" to 3-1/4" dia) Potato
1 Tsp Garlic Powder
1 Tbsp Olive Oil
1 Dash Salt
1 Dash Pepper
Preheat oven to 375 degrees F.
Grease a muffin tin with oil or cooking spray.
Shred potatoes.
Using a kitchen towel or cheesecloth, drain the excess water from the potatoes
In a large bowl, mix shredded potatoes with olive oil, garlic powder, salt and pepper
Press potato mixture into each muffin cup created a small reservoirin the centre
Bake for 30-40 minutes or until they've reached your desired crispness.
Serve topped with sour cream and chives, if desired
