1 Cup Brown Rice
3 Tbsp Soy Sauce
1 Tbsp Sesame Oil
1/2 Tsp Ginger
1/4 Tsp, ground Pepper
2 Tbsp Olive Oil
2 Cloves, minced Garlic
1/2 Medium (2-1/2" dia) Onions
1/2 Cup chopped Carrots
1/2 Cup Corn
1/2 Cup Peas
2 1/3 Cup, chunks Pineapple
4 1/2 Tbsp chopped Scallions
Cook brown rice as per package directions to yield 2 cups, cooked.
In a small bowl, whisk together soy sauce, sesame oil, ginger powder, and white pepper; set aside.
Heat olive oil in a large skillet or wok over medium-high heat.
Add garlic and onion to the skillet, and cook, stirring often, until onions have become translucent, about 3-4 minutes.
Stir in carrots, corn, and peas, and cook, stirring constantly, until vegetables are tender, about 3-4 minutes.
Stir in rice, pineapple, green onions and soy sauce mixture.
Cook, stirring constantly, until heated through, about 2 minutes.
