5 Potato large (3" to 4-1/4" dia) Potato
5 Medium (approx 2-3/4" long, 2-1/2 dia.) Red Bell Pepper
5 Medium (approx 2-3/4" long, 2-1/2" dia) Green Bell Pepper
3 Medium whole (2-3/5" dia) Tomatoes
1 Tbsp Olive Oil
Peel potatoes and add to a pot, covered with water.
Bring to a boil and cook until fork tender.
Chop peppers and tomatoes.
Put them into a pan and add olive oil or any other oil of your choice.
Allows excess water to evaporate, about 15 minutes.
Serve potatoes with the pepper mixture and enjoy!
