2 Cup Pasta
1 Tbsp Olive Oil
1 Medium (2-1/2" dia) Onions
1/2 Stalks, large (11 inches long) Celery
1 Medium (approx 2-3/4" long, 2-1/2" dia) Green Bell Pepper
1 Clove Garlic
1/2 Tsp Curry Powder
1 Cup, halves or slices Peaches
8 Tbsp Light Mayonnaise
1 Dash Salt
1 Dash Pepper
8 Tbsp Walnuts
Boil pasta until al dente according to package directions.
Rinse with cold water and drain well.
Heat oil in a skillet over medium heat.
Fry onion, celery, pepper, and garlic clove until tender.
Add curry powder and cook for about 2 minutes.
Remove from heat.
Cut peaches in bite-sized bits and add with it's juice to the onion mixture.
Add mixture to pasta and stir through.
Add mayonnaise and season with salt and pepper.
Chill for at least an hour before serving.
Garnish with walnuts.
