Onion Potato Pizza Healthy Recipe

2 Potato medium (2-1/4" to 3-1/4" dia) Potato
1 Tbsp Olive Oil
2 Cup chopped Onions
4 Oz Pizza Dough
1 Cup, shredded Mozzarella Cheese
1/2 Oz Goat Cheese
1 Cup, chopped Kale
2 Clove Garlic


Preheat oven to 450 degrees F.

Place potatoes in a saucepan; cover with water.

Bring to a boil.

Cook 10 minutes or until just tender; drain.

Cool slightly; cut potatoes crosswise into 1/4-inch slices.

Heat olive oil in a large nonstick skillet over medium-high heat.

Add onion to pan, and sauté about 8 minutes or until tender.

Place dough on baking sheet and roll out or stretch to desired size (round or rectangular).

Sprinkle mozzarella evenly over dough.

Arrange potatoes and onion over mozzarella; top evenly with goat cheese and garlic.

Bake in lower third of oven for about 15 minutes or until browned.
