1 Extra large Egg
3 Large Egg White
1 Tbsp Parmesan Cheese
1 Tbsp, shredded Cheddar Cheese
1/4 Tsp Salt
0 Tsp Crushed Red Pepper Flakes
0 Tsp Garlic Powder
0 Tsp, ground Pepper
1/2 Tsp Olive Oil
1/2 Cup sliced Mushrooms
2 Tbsp Green Bell Pepper
1 Tbsp chopped Onions
1 Cup Spinach
In a small bowl, beat the egg and egg whites.
Add cheeses, salt, pepper flakes, garlic powder, and pepper; mix well.
In an 8-in.
nonstick skillet over medium heat sauté the mushrooms, green pepper and onion in oil for 4-5 minutes or until tender.
Add spinach; cook and stir until spinach is wilted.
Add egg mixture.
As eggs set, lift edges, letting uncooked portion flow underneath.
Once done cooking cut into wedges and serve immediately.
