Ingredients

1 Oz Japanese Noodles
1 Spray , about 1/3 second Pam Cooking Spray
1/2 Cup, pieces or slices Mushrooms
1 Tsp Ginger Root
1 Tsp Garlic
1 Cup, chopped Kale
2 Tsp Miso
1 Cup Water

Directions

Cook soba noodles according to package directions.

Drain and set aside

Spray small sauce pan with olive oil spray.

Sauté mushrooms, ginger, and garlic until mushrooms are soft and release their liquid.

Add kale.

Cook 1 minute more.

Add miso and water.

Heat thoroughly

Place soba noodles in bowl.

Pour miso and mushroom mixture over noodles.
