Mock KFC Mashed Potatoes and Gravy Healthy Recipe

4 Potato large (3" to 4-1/4" dia) Potato
1 1/2 Cup Water
1/3 Cup Whole Milk
3 Tbsp Butter
2 Tsp Salt
1 Tbsp Vegetable Oil
1 1/2 Tbsp Wheat Flour
1 Cup Chicken Broth
1 Cup Reduced Fat Milk
1 Tsp Pepper


Mashed Potatoes: Chop potatoes.

Place in a pot and cover completely with water.

Bring to a boil and cook for 15-20 minutes or until fork tender.

Drain, reserving 1 1/2 cups water.

Combine potatoes with 1 1/2 cups water, 1/3 cup milk, butter and 1/2 tsp salt in saucepan over medium heat.

Bring to boil then remove from heat.

Whip until fluffy.

Gravy: Make a roux by combining oil with 1 1/2 tbsp of flour in a medium saucepan over medium to low heat.

Heat the mixture for 20 minutes, stirring until it is a chocolate color.

Remove the mixture from the heat, add remaining ingredients to saucepan and stir.

Put saucepan back over heat, turn it up to medium and bring gravy to boil.

Reduce heat and simmer for 10-15 minutes or until thick.

Serve the mash potatoes with gravy poured over the top.
