1 Cup Sun-Dried Tomatoes
1/2 Cup Soymilk
1 Tbsp Rosemary
1/2 Tbsp, chopped Basil
1 Tbsp Thyme
1 Medium whole (2-3/5" dia) Tomatoes
1/2 Cup, chopped Scallions
10 Oz Mixed Baby Greens
1/2 Cup Arugula
1 Fruit without seeds Lemons
1 Clove Garlic
4 Kernel Brazilnuts
Soak the sun-dried tomatoes in the soy milk for an hour.
Chop the fresh herbs, tomato, and onions and toss them with the salad greens.
Add additional veggies as desired.
Juice the lemon and combine in a high-powered blender with the sun dried tomato mixture and garlic until smooth.
Pour over salad and toss together well.
Top with brazil nuts and enjoy!
