1 Potato large (3" to 4-1/4" dia) White Potatoes
1 Tbsp Olive Oil
1 Tbsp Butter
1 Tbsp Sour Cream
1 Tsp Peppercorn
1 Tsp Salt
Microwave the potato for 5 minutes.
Flip and microwave the other side for 5 minutes.
Remove from microwave and cut in half.
Pour olive oil into the cut potato and let soak in for 1-2 minutes.
Spread butter and let sit for 1 minute, then cover with the sour cream
Season with salt and pepper, to taste.
