1 1/2 Cup Corn
1 Pepper Jalapeno Peppers
1/2 Tsp Chili Powder
1/2 Tsp Salt
1/2 Lime yields Lime Juice
2 Tbsp Fresh Cilantro
2 Oz Mexican Cheese
Dice jalapeno pepper and chop cilantro.
Combine with drained corn, salt, lime, chili powder, and cotija cheese (if you cannot find this cheese, feta works ok as a substitute).
