3/4 Cup Quinoa
2/3 Cup Spinach
1 3/4 Oz Feta Cheese
1/3 Cup Olives
1/4 Medium (2-1/2" dia) Onions
2 Tbsp Hummus
2 Tsp Roasted Red Pepperr & Chipotle Hot Sauce, Warm
1/2 Cup slices Cucumber
1 Tsp Lemon Juice
1 Dash Salt
1 Dash Pepper
Cook quinoa according to package directions.
While quinoa is cooking, chop the other ingredients.
Once quinoa is finished, place all ingredients in a bowl.
Top with lemon juice, salt, and pepper.
