1 Tbsp Dijon Mustard
2 Tbsp Red Wine Vinegar
2 Tbsp Olive Oil
2 Tbsp Maple Syrups
2/3 Cup Couscous
1/4 Cup Spearmint
0 Grams Chives
4 Oz Feta Cheese
1 Tsp Salt
1 1/2 Cup Chickpeas
2 1/4 Tomatoes Cherry Tomatoes
1/2 Small Onions
1 Dash Salt
1 Dash Pepper
1/2 Cucumber (8-1/4") Cucumbe
Wisk together first four ingredients to make dressing.
Prepare couscous according to the package directions.
While couscous is cooking, chop mint, tomatoes, onion and cucumber.
In a bowl, combine couscous, mint, chives, cheese, chickpeas, tomatoes, onion, cucumbers, salt and pepper.
Pour dressing over mixture and toss lightly.
