Ingredients

10 Strip cooked Bacon
18 Large Egg
2 Cup Salsa
1 1/3 Oz Nonfat Greek Yogurt
2 Tsp Thyme
1 Tsp Salt
1 Tsp Pepper
1 Cup chopped Onions
2 Cloves, minced Garlic
1 Cup, chopped Red Bell Pepper
1 Tbsp Olive Oil
1 Cup, shredded Cheddar Cheese
15 Tortilla (approx 7-8" dia) Tortillas

Directions

Oven bake the bacon at 375 degrees F for 18 minutes, or until crispy.

Remove from oven and drain on paper towels; chop.

Whisk eggs in large bowl.

Stir in salsa, yogurt, thyme, salt, and pepper.

Sauté onion and peppers with garlic in a frying pan over medium heat with 1 tbsp oil until nearly done, about 5-7 minutes.

Scramble egg mixture in skillet with onions and peppers.

Stir in cheese and bacon when eggs are set.

Let cool.

Assemble into 15 burrito wraps.

Wrap in foil or saran wrap.

Freeze up to 3 months.

Warm in oven at 350 degrees F for 20 minutes or microwave until reheated.
