2 Tbsp Bacon Fat
4 Potato large (3" to 4-1/4" dia) Potato
1/2 Large Onions
1 Dash Salt
1 Dash Pepper
Heat the bacon drippings in a large skillet over medium heat.
Add potatoes and onion, and stir to coat.
Cook, stirring occasionally, until potatoes are tender and golden brown, about 15 minutes.
Season with salt and pepper, and serve.
