12 Cup, diced Potato
3 Tbsp Butter
1 Medium (2-1/2" dia) Onions
4 Cup, shredded Cabbage
3/4 Cup Reduced Fat Milk
3/4 Tsp Salt
3/4 Cup, shredded Cheddar Cheese
1/4 Tsp Pepper
Fill a large pot halfway with water and add the potatoes.
Bring to a boil and cook for 20 minutes or until fork tender.
Meanwhile melt butter in a large skillet, add onion and cook until softened for 10 minutes.
Stir in the cabbage and cook for 5 minutes until wilted.
Drain the potatoes and add to a large bowl and mash.
Mix in the milk and salt, cooked onion and cabbage and cheese into hot potatoes and season with pepper.
Mound onto serving plates and make a well in the center of each.
Pour a little melted butter into each well, if desired.
