2 Tbsp chopped Onions
2 Tbsp Fresh Cilantro
1 1 Oz Ground Beef
1/2 Tsp Salt
1/2 Tsp Chili Powder
1/2 Tbsp Butter
3 Extra large Egg
Chop onions and cilantro.
Place beef, onion, cilantro, salt, and chili powder together in a big bowl.
Mix thoroughly with your hands.
Heat a pan on medium-high until it gets hot.
You shouldn’t need to add any oil.
Put the meat in the pan.
Let meat brown on the bottom, without touching it, for 3 minutes.
Break up with a wooden spoon and continue to let it cook, stirring occasionally (until all the pink is gone).
Heat a non-stick pan over medium heat with a bit of butter.
Whisk 2-3 eggs together and pour into the pan.
Rotate pan so the eggs cover the bottom.
Cook in the pan until firm.
Remove onto a plate.
Top half with the beef and fold omelet over onto it self.
Serve and enjoy!
