2 2/3 Cup, cubes Yam
1/2 Lb Ground Beef
1/2 Small Red Bell Pepper
1/2 Medium (2-1/2" dia) Onions
2 Tbsp Olive Oil
1 Tbsp Coriander Leaf
1/2 Tbsp Paprika
1/2 Tsp Coriander Seed
1/2 Tbsp, whole Cumin
3 Tsp, ground Oregano
1 Dash Pepper
1 Dash Salt
1 Cup, chopped Kale
1 Tbsp Lime Juice
1 Fruit Avocados
Preheat oven to 450 degrees F.
Pierce the sweet potatoes several times with the times of a fork.
Place the sweet potatoes on a baking sheet.
Bake until tender, about 45 minutes.
While sweetpotatoes are baking, in a large skillet brown the ground beef.
Add the bell peppers, onions, and oil and sauté until the onions and peppers are tender.
Add all of the spices and mix well.
Add the kale and sauté until the kale is wilted and tender (about 3 minutes).
To assemble, slice the sweet potatoes open lengthwise and mash the insides.
Scoop the beef/kale mixture into the middle of each sweet potato.
Squeeze fresh lime juice over beef/kale mixture.
Serve with slices of avocado.
