16 Oz Green Beans
1 Tbsp Olive Oil
2 Cloves, minced Garlic
1 Medium whole (2-3/5" dia) Tomatoes
2 Tbsp Pine Nuts
1 Tsp Lemon Juice
1 Dash Salt
Snap stems off of ends of green beans and wash.
Steam or blanch green beans in boiling water for about 2 minutes, until bright green.
Immediately transfer beans to a bowl of ice water, then drain when cool.
Heat oil in a skillet over medium heat.
Add garlic and stir until fragrant, about 30 seconds.
Add tomato to pan and sauté until soft, about 2 minutes.
Add green beans and toss to heat through, being careful not to overcook.
Add pine nuts, squeeze of lemon juice, and salt.
Transfer to a serving dish and enjoy!
