4 Croissant, medium Croissants
2 Tbsp Butter
5 Large Egg
1 Dash Salt
1 Dash Pepper
4 Strip cooked Bacon
2 Cup cherry tomatoes Cherry Tomatoes
4 Tbsp Balsamic Vinegar
1 Tbsp Olive Oil
1 Cup, shredded Cheddar Cheese
Half each croissant, and place under the grill on an oven tray until crispy.
Set aside.
Heat the butter in a saucepan and scramble the eggs, season with salt and black pepper.
Arrange the tomatoes on a baking tray, cover with balsamic and drizzle with olive oil – grill in the oven until the tomatoes break open.
Remove and set aside.
To assemble: Place the croissants on a plate, top with scrambled egg and crispy bacon.
Arrange the tomatoes and top with grated mature cheddar and micro herbs.
