1/2 Large (8-1/4" long) Cucumber
1/4 Large (2-1/4 per pound, approx 3-3/4" lo Red Bell Pepper
1 Medium whole (2-3/5" dia) Tomatoes
1/4 Small Onions
1/4 Cup Beef Broth Or Bouillon Canned Soup
1/4 Cup Tomato Juice
1 Tbsp Olive Oil
2 Tbsp Red Wine Vinegar
1/2 Tsp Salt
1/2 Tsp Pepper Or Hot Sauce
1/2 Tbsp Worcestershire Sauce
Rinse the cucumber, bell pepper, and tomato.
Peel the cucumber, remove the seeds from the pepper.
Chop the pepper, tomato, onion, and place in a large mixing bowl.
Stir in the beef broth, tomato juice, oil, vinegar, and salt.
Add hot sauce and worcestershire sauce to taste, a few drops at a time.
Cover and chill before serving.
