4 Potato medium (2-1/4" to 3-1/4" dia) Potato
1 Tbsp Butter
3 Slice, medium (1/8" thick) Onions
1 Tbsp Wheat Flour
1/2 Tsp Salt
2 Cup Lowfat Milk
3 Cup, shredded Cheddar Cheese
1 Tbsp Parsley
2 Tsp or 1 packet Mustard
5 Frank Hot Dogs
Preheat oven to 350 degrees F.
Place potatoes in a pot and cover with water.
Bring to a boil and cook until fork tender; drain and set aside to cool.
In a saucepan over medium heat cook onion in butter untill tender, but not brown, about 5 minutes.
Blend in flour and salt.
Add milk all at once; cook and stir over medium heat until thickened and bubbly.
Add cheese, stirring to melt.
Stir in parsley and mustard.
Fold in potatoes and Frankfurters.
Place in a 1 quart casserole.
Cover and bake for about 35 minutes or until heated through.
