Ingredients

7 Large Egg
6 1/3 Oz Caster Sugar (Coles)
1 Cup Butter
1 1/2 Cup, chips Dark Chocolate
1 Cup Cocoa
2 Oz Caster Sugar (Coles)
1/2 Tsp Salt

Directions

Grease and line a 9 inch springform pan with parchment.

Preheat oven to 300 degrees F.

In a bowl of an electric mixer, with the whisk attachment, whisk the egg yolks with the 1st sugar for 10 minutes until very pale in colour and tripled in volume.

In a bain marie, gently melt the butter and chocolate.

Remove from the heat and mix in the cocoa powder.

In a new clean bowl, whisk the egg whites with remaining sugar and the salt until soft peaks form.

Fold the chocolate mix into the yolks and then gently fold the whites, trying to keep as much volume as possible.

Pour the cake mix into prepared pan.

Bake for a bout 35 minutes, until a toothpick comes out clean.
