2 Cucumber (8-1/4") Cucumber
1 Cup cherry tomatoes Cherry Tomatoes
1/4 Tsp Salt
1/4 Tsp Pepper
1/2 Tbsp, leaves Thyme
1/2 Tbsp Sesame Seeds
1/4 Cup, crumbled Feta Cheese
1/2 Cup Olives
1/2 Cup Parsley
2 Tbsp Olive Oil
1 Lemon yields Lemon Juice


Peel and dice cucumbers.

Dice onions and tomatoes and place in bowl with lemon juice; combine with remaining ingredients.

Can use Kalamata or Moroccan olives; season to taste.
