1 Cup 10 Minute Farro
1 Cup Peas
1 Medium (2-1/2" dia) Onions
2 Tbsp Sunflower Seed Kernels
1 Oz Feta Cheese
2 Tbsp Nonfat Greek Yogurt
2 Tbsp Lemon Juice
1 Tbsp Olive Oil
3 Tbsp Parsley
1 Tbsp chopped Chives
1 Dash Salt
1 Dash Pepper
Cook farro according to package directions.
Let cool a bit, or make ahead of time to use in the salad.
For the salad, combine the farro, peas, red onion, sunflower seeds, and feta, set aside.
Make the dressing by combining the remaining ingredients in a jar with lid.
Shake well until combine and pour over salad.
Alternatively, whisk together ingredients in a small bowl.
Toss everything to combine, taste, and add salt/pepper as needed.
