Eggs Piperade Healthy Recipe

1/4 Cup Olive Oil
1 Medium (2-1/2" dia) Onions
1 Medium (approx 2-3/4" long, 2-1/2 dia.) Red Bell Pepper
1/2 Pepper, large (3-3/4" long, 3" dia) Yellow Peppers
2 Cloves, minced Garlic
2 Medium whole (2-3/5" dia) Tomatoes
6 Extra large Egg
1 Tsp Thyme
1 Tbsp Parsley
16 Oz Sourdough Bread


Heat oil in a large frying pan over medium-high heat.

Add onion, peppers, and garlic, cover and cook, stirring occasionally, until very tender (8-10 minutes).

Add tomato, season to taste and simmer uncovered until beginning to break down (4-5 minutes).

Gently stir in egg and cook, stirring occasionally, until scrambled (3-4 minutes).

Scatter with thyme and parsley and serve hot with a crusty baguette.
