1 Tbsp Sunflower Oil
1 Cup, pieces or slices Mushrooms
1 Cup Spinach
1 Large Egg
1 Dash Salt
1 Dash Pepper
Add half the sunflower oil to a skillet heated ove rmedium, sauté mushrooms and spinach until mushrooms are tender, about 5 minutes; remove to a plate.
Add remaining sunflower oil to the skillet.
Crack egg into the pan, and cook sunny-side up, about 5 minutes.
Add egg to vegetables.
Add salt and pepper to taste.
