Ingredients

5 Potato medium (2-1/4" to 3-1/4" dia) Potato
8 Tbsp Vegan Mayo
3 Tbsp Vinegar
1 Medium (2-1/2" dia) Onions
2 Stalk, medium (7-1/2" - 8" long) Celery
1 Dash Salt
1 Dash Pepper

Directions

Boil potatoes until just soft (test with fork).

Transfer to strainer and cool.

Once the potatoes have cooled, peel if desired, and chop into bite-sized pieces.

Gently toss together all the ingredients in a large bowl, seasoning with salt and pepper to taste.

Can serve immediately, or chill before serving.
