Ingredients

1/2 Cup Lime Juice
2 Fruit (2" dia) Limes
4 Tbsp Fresh Cilantro
2 Pepper Red Peppers
2 Cloves, minced Garlic
1 Tbsp Honey
1/2 Tsp Salt
1 Tsp Chili Powder
8 Breast, bone and skin removed Chicken Breast

Directions

Combine all ingredients (except chicken) in a bowl; whisk well

In a shallow sealable container or in a large zip-top bag combine chicken breasts and marinade.

Cover (or seal) and marinate for at least 2 hours (marinate overnight for fullest flavor)

Preheat oven to 450 degrees F and place a rack in the middle.

Place chicken breasts in a large baking dish or on foil-lined baking sheet.

Bake uncovered for 12 minutes, then flip on the other side and bake for further 12 minutes, or until cooked through (the temperature should register 165°F on an instant-read thermometer).


Cooking time depends on how big the chicken breasts are and how hot is your oven, the most important thing is that the chicken is cooked through

Once cooked, let the breasts rest for a minute or two before serving to allow the juices to evenly distribute through the meat.

Sprinkle with a bit of chopped cilantro and serve.
