7 Potato large (3" to 4-1/4" dia) Potato
2 1/2 Cup (1" cubes) Pumpkin
1 1/4 Cup, fluid (yields 2 cups whipped) Heavy Whipping Cream
2 Tbsp Corn Flour
1 3/4 Oz Parmesan Cheese
1 Cup, shredded Cheddar Cheese
Preheat oven to 350 degrees F.
Thinly slice the potato and pumpkin.
Layer potato and pumpkin in a casserole dish.
In a bowl add remaining ingredients and stir well.
Pour mixture over potato and pumpkin.
Bake for approximately 45 minutes or until vegetables are cooked through and tender.
