2 Potato large (3" to 4-1/4" dia) Potato
1/2 Tbsp Olive Oil
2 Tbsp chopped Shallots
1/2 Tsp Wheat Flour
1/2 Cup Nonfat Milk
1 Package (10 oz) Spinach
1/3 Cup Sour Cream
1 Tsp Worcestershire Sauce
Pierce potatoes all over with a fork.
Microwave on high for 5 minutes.
Turn and microwave another 5 minutes, until tender.
Heat a little bit of oil in pan and add shallot.
Sprinkle a dash of flour into pan.
slowly add milk, wisk until thickened.
Stir in spinach, sour cream, and 1 tsp worcestershire sauce.
Serve over the potato and enjoy!
