1 Spray , about 1/3 second Pam Cooking Spray
1/4 Cup, chopped Onions
3/4 Tomatoes Cherry Tomatoes
1/2 Cup Spinach
4 Extra large Egg
1 Oz Cottage Cheese


Spray a pan with nonstick spray and heat over medium.

Chop onion and sauté until translucent, 4-5 minutes.

Add tomaoes and spinach and cook just a few minutes, until spinach is wilted.

Whisk together eggs and cottage cheese.

Pour into the pan over the vegetable and cook until eggs are set and have reached desired doneness.
