1 1/2 Potato medium (2-1/4" to 3-1/4" dia) Potato
2 Cup Reduced Fat Milk
1 1/4 Grams Sausage
3/4 Can (12 oz) yields Corn
1/2 Cup chopped Celery
1/2 Cup, chopped Onions
1 Tbsp Olive Oil
Microwave potatoes for 8-12 minutes.
Meanwhile, in large pot, sauté onions, celery and corn for 5-8 minutes, until soft.
Chop sausage into small cubes.
In separate skillet, brown sausage until crisp.
Chop potatoes into cubes.
Add sausage and potatoes to corn, onion and celery mixture.
Mash potatoes slightly; add milk.
Let simmer for 10 minutes.
Serve with salt and freshly ground pepper.
