1 Cup White Rice
1 Cup Coconut Milk
1 Tsp Vanilla Extract
1 Fruit without refuse Mangos
Put 2 cups of water, the rice and coconut milk, in a medium saucepan.
bring to a boil over medium-high heat, then reduce heat and simmer uncovered for 45 minutesor until rice is tender, stirring occasionally.
During the last 10 minutes of cooking add the vanilla and sweetner if required, be sure to add more water if the rice gets too dry.
Serve cold or hot, topped with chopped mango.
