1 Cup Sugar
1 Cup Water
1 Cup Spearmint
8 Tbsp Lime Juice
2 Cup Coconut Water (Liquid From Coconuts)
8 0 Oz Vanilla White Rum
1 Cube Ice Cubes
For the simple syrup: Combine sugar and water in a small saucepot over medium-high heat.
Bring to a simmer until the sugar dissolved.
Remove from heat and cool completely.
Put the mint, lime juice, and Simple Syrup in a pitcher.
Muddle for a few seconds to release the flavor from the mint.
Pour in the coconut water and rum.
Add ice to fill a pitcher, and stir to combine and chill.
