1 Cup Blue Crab
1/2 Cup cherry tomatoes Cherry Tomatoes
1 Cup Corn
1 Tbsp Olive Oil
1 Tsp Lemon Juice
1/3 Sprigs Fresh Cilantro
1 Medium (approx 2-3/4" long, 2-1/2 dia.) Red Bell Pepper
Chop tomatoes and cilantro.
Combine with drained crab, corn, olive oil and lemon juice.
Cut a bell pepper in half length-wise and remove seeds.
Stuff each half with crab mixture and serve.
