1 Cup Quinoa
1 Cup Vegetable Broth
2 Oz Pork And Beef Chorizo
1 Tbsp Olive Oil
1 Potato large (3" to 4-1/4" dia) Potato
1 Dash Salt
1 Dash Pepper
1 Cup Corn
Cook quinoa using package directions; substitute half of the water for vegetable broth
Cook chorizo in a pan over medium heat until cooked through.
Chop potatoes.
Heat oil in a sauté until fork tender, 10-15 minutes.
Season potatoes to taste with salt and pepper.
Add thawed corn in with chorizo when it's almost done
Turn off heat and mix everything together.
Serve and enjoy!
