16 Oz Ground Chicken
1 1/2 Large Zucchini
2 Tbsp Onion Powder
4 Tbsp Fresh Cilantro
2 Cloves, minced Garlic
1 Tsp Salt
1 Tsp Pepper
Preheat oven to 400 degrees F.
Line a baking sheet with parchment paper.
Toss chicken with shredded zucchini, onion powder, cilantro, garlic, salt, and pepper.
Mixture will be quite wet.
Scoop mixture out by the spoonful and form meatballs onto the lined pan
Bake for 20-25 minutes, or until cooked through
If desired, place under the broiler for an additional 2-3 minutes or until browned on top.
