3 Cup Brown Rice
14 Oz Sausage
1 Cup sliced Mushrooms
1 Cup, sliced Onions
1 Medium (approx 2-3/4" long, 2-1/2 dia.) Red Bell Pepper
1 Medium (approx 2-3/4" long, 2-1/2" dia) Green Bell Pepper
1 Tsp Garlic
2 Tbsp Vegetable Broth
3/4 Cup, cubes Sweet Potato
1 Tbsp Fresh Cilantro
2 Cup Salsa
Prepare rice as per package directions.
Set aside.
Heat a large non-stick pan over medium heat.
Add the sausage and cook until browned, stirring often.
Add the mushrooms, onion, bell peppers, garlic, and broth and simmer for 3 minutes.
Add the sweet potato and cilantro and cook, stirring often, for about 3 minutes, until the sweet potato is warm.
Pour the mixture over the brown rice and top with salsa.
