6 Oz Chicken Breast
1 Cup, diced Potato
1/2 Medium (approx 2-3/4" long, 2-1/2" dia) Green Bell Pepper
1 Medium Zucchini
1 Tsp Olive Oil
1 Dash Pepper
1 Stalk Onions
Bring a pot of water to boil.
Add chicken breast water and boil for 8-12 minutes, or until chicken is cooked through and no longer pink.
Drain and set aside to cool slightly.
Chop into bite sized pieces.
Chop potato, bell pepper, and zucchini.
Heat oil in a skillet over medium heat.
Sauté bell pepper, potato, and zucchini for 5-7 minutes until tender.
Add chicken and pepper and sauté just a few more minutes.
Add to a plate and Enjoy!
