2 Tbsp Butter
3 Cloves, minced Garlic
2 Cup Vegetable Broth
1 Cup Brown Rice
2 Medium Zucchini
1 Cup, shredded Cheddar Cheese
1 Dash Salt
1 Dash Pepper
Melt butter in a large saucepan over medium high heat.
Add garlic, and cook, stirring frequently, until fragrant, about 1-2 minutes
Stir in vegetable broth and rice.
Bring to a boil; cover, reduce heat and simmer until rice is cooked through, about 15-20 minutes
Remove from heat and stir in zucchini and cheese; season with salt and pepper, to taste.
Cover and let stand until cheese has melted, about 3-5 minutes
Serve immediately.
