Ingredients

3 Cup Corn
6 Lime yields Lime Juice
3 Tbsp chopped Onions
16 Oz Halibut
2 Fruit without skin and seeds Avocados
2/3 Sprigs Fresh Cilantro
1/2 Tsp Salt
6 Cup Tortilla Chips

Directions

Add corn to a plate and put aside.

Cut fish into 1/2-inch pieces

In a large bowl, mix together the lime juice, red onion, and salt.

Add the fish and stir so the fish is evenly coated with lime juice.

Cover and refrigerate for 15 to 30 minutes, until the fish is firm and opaque.

Stir occasionally as you think about it.

Start tasting the fish after 15 minutes, and continue until it is as firm as you like it.

In the meantime diced the avocado, and chop the cilantro.

When the fish has reached your preferred firmness, serve the ceviche right away by combining it with the diced avocado, corn and chop cilantro.

Serve with tortilla chips.
