1/2 Cup pieces Turkey Bacon
1 Cup, whole Almonds
2 Cup chopped, (1/2" pieces) Cauliflower
2 Extra large Egg
3/4 Cup Nonfat Greek Yogurt
1 Small Onions
1 Cup, shredded Cheddar Or Colby Cheese
1 Tsp Garlic
1 Tsp Garlic Powder
3 Dash Salt
3 Dash Pepper
Prepare a mini muffin tin with cooking spray; set aside.
Cook bacon to desired crispiness.
Drain and chop; set aside.
Preheat oven to 400 degrees F.
Lightly pulse almonds and cauliflower in processor, until broken up well but not blended to flour.
Add eggs and greek yogurt to processor and lightly pulse to combine.
Transfer to a bowl and stir in remaining ingredients.
Using a cookie scoop, spoon batter into prepared mini muffin tin.
Bake 20-25 minutes, until slightly browned on top and cooked through.
