1/2 Tsp Salt
1 Tsp Ginger
2 Medium (1 lb) Squash
1/4 Cup Sugar
1/4 Tsp Cayenne Pepper
1/2 Cup Rice Wine Vinegar
3/4 Cup, chopped Scallions
Peel squash, discard seeds and coarsely shred.
Stir together vinegar, sugar, and salt in a large bowl until sugar and salt are dissolved, then add remaining ingredients and toss well.
Chill relish, covered, tossing occasionally, at least 2 hours (to allow flavors to develop) and up to 2 days.
