2 Potato medium (2-1/4" to 3-1/4" dia) Red Potatoes
2 Cup flowerets Broccoli
1 Tbsp Butter
2 Tbsp Parmesan Cheese
1 Cloves, minced Garlic
1 Dash Pepper
Preheat oven to 425 degrees F.
Place potatoes on a baking sheet and bake for about 30 minutes, or until fork tender.
Bring a pot of water to boil.
Add the broccoli and cook for about 4-5 minutes or until broccoli is tender; drain and set aside.
Halve potatoes, scoop, and mash.
Add butter, half of the cheese, garlic, and pepper.
Return to skins, top with broccoli, sprinkle with remaining cheese and black pepper.
Bake just to melt cheese, about 5 minutes.
